Many people are experiencing success on the Ketogenic diet and making swaps in their diet to follow it closely. But it requires you to cut almost all carbs, which isn’t an easy feat. And what do most people miss the most? Bread. But we’re here to tell you with just a few ingredients, you’ll be in low carb bread heaven without slipping out of ketosis!

To begin, choose a microwaveable mug that is a good shape for the “loaf” of bread. Realistically, you can use any type, but if you want to be able to slice the bread, choose a taller, more narrow mug. To reduce the carbs and increase the protein, we used almond flour instead of normal all-purpose flour! You might notice a slight texture change compared to wheat bread, but surprisingly, you don’t get an obvious nutty flavor. Next up, add the spices – garlic powder, salt, and Italian seasoning – to give the bread some serious flavor and baking powder to make sure it rises!

Be sure to mix all the dry ingredients first in order to distribute the seasonings and (more importantly) baking powder throughout. Then add your fats! The egg and melted butter help bind the mixture and increase the fat content of the recipe, which is so important for keto-dieters. Mix that all together before adding the shredded cheese and stirring just until combined. The mixture is going to look quite wet at this point, but don’t worry! Almond flour is very absorbent.

Put the mug into the microwave and cook for 1 minute initially. Once the time has elapsed, tap the top of the bread to see if it’s still wet or particularly spongy. If necessary, return to the microwave for another 30 seconds. The final cook time will vary depending on the strength of your microwave, so continue cooking for 15-30 second increments until the bread is fully cooked.

Turn the mug upside down to release the bread. The fat content in this recipe should prevent the bread from sticking, so no need to worry! Allow it to cool slightly before slicing and devouring it! Eat on it’s own as a snack or serve with another keto-friendly dinner recipe! Enjoy!
